Analysis of Vitamin C Flesh and Rind of Red and Yellow Watermelon (Citrullus vulgaaris Schard) using UV Spectrophotometry

Abstract

Background: Indonesia has a tropical climate because it is located in the equatorial region which provides opportunities for various plants to grow abundantly, including fruit. Generally, vitamin C is one of the ingredients found in fruit, which acts as an antioxidant. There are so many fruits, one of which is watermelon (Citrullus vulgaris Schard). Watermelon is also used to lower blood pressure for hypertension sufferers, because of its high water and potassium content so it can stabilize blood pressure. Objective: The aim is to detect the presence and quantity of vitamin C in the flesh and rind of red and yellow watermelons. Method: The method includes quality and quantity tests using color reagents and UV spectrophotometry. Results: Research provides information that the flesh and rind of watermelon contains vitamin C with signs of color changes and yellow-brick red and brown precipitation. Vitamin C from the flesh and rind of red and yellow watermelon is 50,688 respectively; 42,482; 34,764; and 42.152 gr/L. Conclusion: The flesh and skin of red and yellow watermelon found vitamin C.
